Did you know this about the IW Knights of Columbus?

The IW Knights wish to thank the members of Incarnate Word parish for their support of our 2017 Lenten Charitable Fundraising Series: the Fat Friday/Mardi Gras event and the six Cajun Fish Fries.  By far, it was our most successful Lenten event.  We served more guests, fried more fish/shrimp and earned more funds for our charitable giving program than ever before.  Among our notable guests were: Archbishop Robert Carlson, the mayor of Chesterfield (several times), our great Pro-life partners – ThriVe of St. Louis and our good friends from Ascension Parish – the Cod-Hoppers.  We were also pleased that Father Vowels stopped by to talk with the guests.

Additionally, special thanks to the IW 8th grade class and their parents for their help each Friday night.  Also thanks to our Friends of the Knights who helped in many ways: conducting the shrimp boils, preparing the Seafood Gumbo and weekly Cajun Specials, helping us take orders in the tunnel,  dish-washing helpers and a hard-working crew from Parkway Central.  We also thank those who were sponsors for the Fat Friday/Mardi Gras event.  And last, but certainly not least, thanks to the Ladies Auxiliary for their annual effort to assemble and sell a veritable mountain of dessert.

We do need to give a shout-out to the many Knights within our council who provide the manpower to prepare, operate and cleanup for each of the 3-hour Friday night sprints.

You might be interested in reading some of what it takes to serve nearly 7,000 guests over seven weeks – IW Knights Cajun style:

  • Thaw and Fry 10,500 pieces of Cod
  • Bake 1,800 pieces of Tilapia
  • Fry 18,200 pieces of Shrimp
  • Boil 9,300 pieces of raw Shrimp
  • Fry 950 pounds of French Fries and 250 pounds of Hush Puppies
  • Prepare and serve 11,000 side order portions

Of course, there is a little bit more to it than what is listed above – but THAT is our trade secret.  We hope you will visit us again and again next season – and bring some friends.  We will be operating in new digs!  We – like you – are quite interested in seeing what the renovated Lower Church Hall will look like!

Finally, we make a habit of donating the majority of our unsold food to the Missionaries of Charity (the order founded by St. Mother Teresa) who operate a Soup Kitchen for the needy in North St. Louis City.

2018 Fat Friday is February 9.  Save the date!
